Cuisine is one of the most authentic ways to tell the story of a territory. At Palazzo Giusti Bistrot, every dish is born from the encounter between Marche tradition and contemporary interpretation, enhancing ingredients that have been part of the gastronomic culture of Urbino and Montefeltro for centuries.
Among the most representative proposals we find the Spianata di Manzo, where the soft Fassona rump meets the famous Casciotta d'Urbino DOP, a cheese known since the Renaissance for its sweetness and delicate flavor. To complete the dish, crispy fried zucchini flowers that recall the simplicity and authenticity of Marche vegetable gardens.
The tradition of homemade pasta lives on instead in our Bottoni di Melanzane: small artisanal ravioli filled with roasted eggplant, accompanied by marjoram and seasonal vegetables. A dish that celebrates simple ingredients, transforming them into a refined experience.
Among the great classics of local cuisine, the Coniglio all'Urbinate could not be missing, prepared according to one of the most representative recipes of the territory. The Marche rabbit is deboned and stuffed with local sausage and olives, then served with Swiss chard, raisins, and pine nuts, in a perfect balance of sweet and savory flavors.
To close the gastronomic journey, our Zuppa Inglese, a contemporary reinterpretation of one of the most beloved desserts of the Italian tradition: vanilla cream, chocolate cream, and soft sponge cake soaked in Alchermes.
